Resveratrol is a stilbene-type phytoalexin found in the skin and seeds of grapes. Resveratrol is a strong anti-oxidant and has been shown to inhibit low-density lipoprotein oxidation. In early 1997 it was revealed that resveratrol displays a wide range of chemopreventive properties. Resveratrol blocks initiation by acting as an anti-mutagen and by inducing phase II drug-metabolizing enzymes. It mediates anti-inflammatory effects and inhibits cyclooxygenase and hydroperoxidase functions.
